This is my second post about searching for new things to prepare for lunch or dinner and using the items that I already have in my pantry and refrigerator. Since I always buy the same meats and veggies in the grocery, my mealtimes can really get boring. Also, I have been trying to save more money by using the staples that I already have at home.
Last week’s lunch cupboard creation was a tuna salad with fresh fruit.
This week I am featuring the dinner cupboard creation…..chicken pasta with a vietnamese twist!
I had bought some chicken thighs for 99 cents/lb and used some pasta shells that I had in the pantry to make my meal.
Cooked chicken thighs in the skillet with minced garlic and onion. Shredded meat as it cooked and bowled pasta at the same time. Drained pasta and tossed with the shredded chicken. Added seasonings that were in the cupboard…sesame oil, fish oil, and salt /pepper and topped with cilantro.
This dish was light and delicious and I didn’t have to order out!!!
