This week I found myself, again, standing in front of the cupboard wondering what I could prepare to compliment the butterfly pork chops that I had bought at the grocery earlier this week. If you have read my cupboard creation posts before, then you know I am a creature of habit. Side dishes at our house come three ways…rice, beans, and potatoes.
I am sooo bored with the above sides, but that is all that I have stocked in my cupboard. So I looked in the refrigerator to see what I could scrounge up. We had cucumbers, tomatoes, onion, baking potatoes, sweet potatoes, lemons, limes and cilantro. So I decided to make a cucumber and onion salad (with vinegar and salt added) and a baked sweet potato instead of the idaho potato on the side. Since we are not big tomato fans I did not add them but it would have added great color and taste for those who love them.
I know that this is may not be new and exciting in the sense of preparing new foods, but this was a great change of pace from the usual and that’s what Cupboard Creations is all about. Alternating your usual sides with a light summer salad not only used what you already had in your pantry but offered more veggies instead of all starches. My son loved the crunchiness of the cucumbers.
