PORK! Good And Good For You Challenge! 4 Week Series!!

You cannot imagine how excited I am to participate with The Motherhood, The National Pork Board and Publix in the Good And Good For You Challenge!! So what is it?

The National Pork Board is asking people to take a pledge to eat healthy throughout 2012 and each week, their retail partner, Publix, will offer a special sale on a cut of deliciously lean pork. So to help kick-start the effort, the “Good and Good For You Challenge” will take place over a four-week period from January 26th-February 22nd 2012 and myself along with a group of fabulous bloggers will be highlighting each pork special and a delicious recipe.

This week’s Pork Be Inspired cut of lean pork is….pork tenderloin!! YUMMY!! And we are making Baked Pork Egg Rolls.

I said “we” are making egg rolls because this is a mad crazy week for our family. We are celebrating the Pastor and First Lady’s 6th Church Anniversary (that is us) and every night this week leading up until Sunday evening is booked with events. So, I needed an extra two sets of hands to make dinner this week. So hubby and baby boy helped me pull it off.

Here is how we all helped out making this incredibly delicious meal:
I purchased my nice cut of pork tenderloin which was on sale and ingredients from our local Publix

Seasoned and cooked the tenderloin and checked for proper cooking temperature with the thermometer that was sent to me:

Hubby chopped up all of my ingredients!

As hubby ran out the door to get his hair cut before that night’s event, I mixed up all of the ingredients for the egg roll filling, placed it in the center of the egg roll wrappers and called baby boy in to start rolling!

Then placed them in the oven for baking!

Ironically enough, since we didn’t have much time in our day, this recipe is perfect for those “last minute” dinner ideas or when you just have enough time to make something that is Good And Good For You. Here is what our egg rolls looked like:

These egg rolls were THE BOMB DOT COM (LOL!!!). I would not lie to you! And with the spicy sauce, it was heaven! For other recipes cooking with lean pork, check out the Pork Facebook Page.

It really is delish and quick. I would also recommend using lettuce or rice paper for wraps if you are not a fan of fried egg rolls. The filling is soooo great!
