So, what’s cooking over here at the Sykes household? This is week #3 of the Good And Good For You Challenge sponsored by The National Pork Board and Publix, so of course we are eating lean pork. This week’s pork special at Publix is pork loin roast and I have cooked Pork Roast with Sweet Potatoes.
Here are pictures of the ingredients that I used and the photos of the preparation:
I did not use rosemary in my recipe because that is an herb that we just don’t care for. I chopped up green onions instead. You can also use sage or thyme.
And the finished product:
I can honestly say that this is the best recipe I have made yet using lean pork. The “other white meat” was moist and the sweet potatoes are tasty! You can find the complete recipe at this link and others like it at the Pork Be Inspired website.
We are going to serve our roast and sweet potatoes with baked asparagus that I also purchased at Publix. Be sure to keep following because next week I will be hosting a giving away of the following:
- Eight (8) $5 coupons to purchase pork
- Recipe booklet featuring inspiring recipes that showcase slim pork cuts
- Meat thermometer
- Reusable grocery bag
- Water bottle
