Good And Good For You Challenge Week 3! Heart-y and Healthy Valentines!

So, what’s cooking over here at the Sykes household? This is week #3 of the Good And Good For You Challenge sponsored by The National Pork Board and Publix, so of course we are eating lean pork.  This week’s pork special at Publix is pork loin roast and I have cooked Pork Roast with Sweet Potatoes.

I did not use rosemary in my recipe because that is an herb that we just don’t care for. I chopped up green onions instead. You can also use sage or thyme.

I can honestly say that this is the best recipe I have made yet using lean pork. The “other white meat” was moist and the sweet potatoes are tasty! You can find the complete recipe at this link and others like it at the Pork Be Inspired website.
