Good And Good For You Challenge! Week 4 And A GIVEAWAY!!!!

This is the last week of the Good and Good For You Challenge hosted by Publix, The National Pork Board, and The Motherhood.

This week’s lean cut of pork that is on sale at Publix are Pork Sirloin Cutlets and I will be making a Greek Salad with Pork with a theme of Healthy Comfort Food Dinners. Since beginning this challenge, I have been inspired to be more selective in what I purchase for my family to eat. And ironically, this past week I have been eating more salads along with my meal in order to get the proper nutritional balance in my diet.

So it was appropriate for me to choose a salad and pork recipe to try out and share with my readers. I am a big fan of greek salads but have always gotten them with grilled chicken or no meat at all, so I was excited to try it with pork. This recipe requires only 20 minute preparation time and 10 minute cook time. This is the type of meal busy moms are looking for that are healthy and tasty as well.

The roast, sweet potatoes with baked asparagus meal that you made is the most appealing to me right now–I love the sides!

I’d like to try the Stuffed Pork, apple, and cheddar panini. Sounds delicious! (although pork is my favorite meat and it ALL sounds delicious!)
