Good And Good For You Challenge with Publix! Game Day Pork Loin Chop Paninis!

This is week 2 of the Good And Good For You Challenge with Publix and the National Pork Board! And this week I am making Stuffed Pork, Cheddar, and Apple Paninis using boneless pork loin chops for GAME DAY-SUPER BOWL SUNDAY!!.

If you are looking for something healthy and as an alternative to buffalo wings and chips and dip? You should try this!

Of course, I purchased my ingredients for this GAME DAY snack from my local Publix:


Even though I was making paninis, I did not have a panini maker so instead I chose to use my electric sandwich maker. But you can use a skillet also.

I purchase the thin sliced pork loin chops which I felt would be best for making sandwich (less slicing is always best for me).

Seasoned lightly and cooked the pork to the appropriate temperature (145 degrees using my meat thermometer)

Mixed up apricot spread and dijon mustard combination, buttered thick sliced wheat bread on one side with margarine and the other with the spread/mustard combo. Added slices of Granny apples and sharp cheddar cheese.


Placed in my electric sandwich maker and toasted for about 2 minutes.

And Voila!! GAME DAY Stuffed Pork, Cheddar, and Apple Paninis!!!


I paired my paninis with pretzel sticks which was a great combo of the sweet spread, tart apple, and salty pretzels.
